Basic pasta

So versatile and so tasty!

Ingredients

Plain white flour 4 cups / 500g
Warm water1 cup / 240ml plus a 2-3 Tbsp
Olive oil4-5 Tbsp
Salt1 tsp

Steps

Mix the flour and the salt in a large bowl.

Add 1 cup of warm water and 4 Tbsp of olive oil.

Mix into a smooth dough using your hands.

Add a little more water if the dough is too dry and add a little more oil if the mixture is crumbly and not very pliable.

You can store the dough in the fridge wrapped in plastic wrap for a day or two or use right away.

Use a pasta machine or rolling pin to roll the dough out. Add some extra flour to prevent sticking.

You can make lasagna sheets, cut the dough into strips to make tagliatelle, fill the dough to make ravioli- the options are countless!
